Ingredients
Kebab
- Mutton Keema + Roasted chana dal in 4:1 ratio
- Onion – coarsely chopped,
- Garlic
- Whole red chillies,
- Whole garam masala
- Salt to taste.
Stuffing
- Finely chopped onions,
- green chillies,
- chopped boiled egg.
Binding
- 1 boiled sweet potato/potato
- Dry Poha ground into powder.
Curry Leaf Chutney
- Curry leaves
- Fistful of coriander
- 2 to 3 cloves of garlic
- Green chillies
- 1 tablespoon tamarind pulp
- 1 teaspoon jeera
- 1 teaspoon Gur (Jaggery)
- 1 fistful roasted peanuts or chana
- Rock salt.
Preparation
- Roast chana dal and soak for 2 hours.
- Boil keema with onion, garlic, garam masala and red chillies on low heat with little water for 15 to 20 min.
- Strain keema mixture for remaining water to drain and cool.
- Grind soaked chana dal and keema mixture to a paste.
- For binding add boiled sweet potato and powdered dry Poha for a little firmness.
- For stuffing mix chopped green chillies, onions and boiled egg.
- Add salt and garam masala.
- Make balls of keema, flatten them and add stuffing and give the shape of kebab.
- Shallow fry with little oil on both sides till brown.
- For Curry Leaf Churney, churn all the ingredients in a mixer and adjust seasoning.
- Vegetarians may use soy keema in place of mutton keema. For stuffing, add mashed green peas instead of egg.
- Addition of kebab masala and Birista to the keema mixture will add more flavour.
(Birista – finely sliced onions soaked in milk for half an hour and then fried till dark brown – optional though not very healthy).
Nutritional value
Mutton – a very rich source of protein and fat without any carbohydrates. It does contain a little saturated fat along with good fat. Hence not to be consumed very often.
Sweet potato and Poha add to the fibre.
Curry leaves are a very good source of minerals like copper, magnesium, calcium, especially iron. It gives fibre too. Chutney also has Vit C in the form of tamarind and green chillies.
